HPTuners or vcm suite would be required to disable VATS. I don’t believe tuner pro supports VZ. Or one of those modules designed by one of the guys at pcm hacking
That sux. Pretty sure Snap-on scan tools can do it. I’ve got a PDF that shows the steps required and there’s no mention of any TIS type stuff other than needing the security code which it can also retrieve.

Yep. Pull the cover off the LHS of the console. One screw under passenger seat about half way down the console. And 2 screws inside the glovebox obviously on the RHS. I can provide the pinout if you want to go this route
There is a factory aux in under the console. It was designed for mobile phones to make and receive calls. Just buy the factory Bluetooth module, it won’t play in stereo only mono.
You could also rig up a cable to connect your phone physically but again it’ll just be mono.
