They're very hard to come by though... I honestly had never known they existed before seeing this thread...
Holden also fitted a few VP Commodores with the 2.3 Turbo 4 cylinder from Saab... The engine made more power than the 3.8, but unfortunately they never went into production...
This is the first time I've ever heard of a 4 cylinder VN Commodore, and it really doesn't seem right at all... I realise NZ got some oddballs like an RB20 VL, but at least that was a 6 cylinder... How much longer did they put 4 cylinders in Commodores (obviously excluding ZB)?
Not an expert on these cars, but here is a general guide on what to check when buying a used car (there is also a video available, and an off-road vehicle guide on their channel)
Holden did make the Adventra, which can be had with an LS1 V8 and AWD, and they're quite capable with some mods...
There's a YouTube channel which takes these cars off-road called "All Terrain Action," and they also have an account on this forum too...

As @Fu Manchu said, it's best to put the 308 into the 80's Hilux body, and I reckon you should just keep the VX as a daily, or as a memory of your father... Putting the VX body onto the Hilux is impossible (or very very difficult)...
Oh right okay... Won't be putting any thicker insulation or getting a very thick material so that shouldn't be an issue, just a regular replacement... Will definitely get somebody else to help if I was to attempt the job myself...
